Guess what, folks! Like it or not, our old GF Pancake mix was okay, but nothing to write home about. Well, it was, really. It was light, full of protein and full flavored. It surpassed most other GF mixes out there, with a much better nutritional profile (more protein and fiber with no cardboard texture or gritty taste...) and of course obsessively GMO free, but it just wasn't...perfect.
So at last, we have set out to perfect it, so it's totally foolproof, just like the cookie mix, which you already know, is a drop of heaven. You already know that Prana Cookies are better than the real thing. And they are the ultimate comfort food! They come out crisp on the outside, chewy on the inside, yummy, absolutely grit free, divine, comforting yet otherworldly and so EASY to make (just add 2 tablespoons butter or coconut oil and 2 tablespoons water, mash together, add chips, drop on cookie sheet and bake...)! They are so perfect that they even flatten themselves in the oven! Now go find another GF cookie mix like that! You and I both know there isn't one...there's only ONE GF cookie mix anyone should bother to eat, and that's Prana Cookies. So back to the ALL NEW Prana Pancakes GF! We started asking ourselves why we don't eat the GF in our household and always opt for the original Spelt instead. Then we realized we were short-changing our GF friends. Yes, I'm sorry to admit it, but I must. So our goal now (and we're 80% there!) is to make our GF pancake mix perfect and foolproof. You know us. That means no: cardboard, grit, dullness, flatness, heaviness, GMOs or any other kind of imperfection. We are very pleased with the way our first TWO test recipes have come out! I am going to all-out brag that I'm an utter genius of a food scientist, that we could come so close to perfection on just TWO tries! However we are picky enough that we will go the full sixty (or more!) if required to make Prana Pancakes GF better than the real thing. We are also working on eliminating a couple of bothersome ingredients for some GF folks. Potato is out and so is oat. Hooray!
